Started off the week just right 😍 with Collard Green Pockets filled with Ground Beef and Cauliflower! Oh so delicious!
I had a whole bunch of collard greens that I wasn’t entirely sure how to cook so that the kids would eat it up without complaints. The solution was collard green pockets and it was a big hit!
All I did was boil water and blanch the collard greens for one minute before dunking them in ice cold water. I sautéed the ground beef with onion, garlic, cauliflower and seasoned with salt, pepper, turmeric, and thyme. Filled the collard greens, closed them up and sautéed them in coconut oil. Easy and just really yummy!

Whenever my customers ask why I got started as a skincare consultant, I always tell them I love working with people, finding solutions and being a businesses owner. I’ve always been organized and am eager to work for myself on my own terms.
In reality though, I want to create a supportive community and be able to take a vacation without having to stress about finances.

I cannot believe that in just two weeks Kaeden will be a year old. How is that even possible?? Part of me has felt every single second of the past year every, and another part of me saw it go by in a blink and is still expecting her to be a tiny infant working on her tummy time. I guess time is weird like that. Anyways, here is my incredible grown up and clever toddler, walking around like she owns the place. The world is yours baby girl.
Oct 4 - Central
Carrie Lam announced on Oct 3 (Thurs) that she was invoking the power under the the Emergency Regulations Ordinance (ERO), bypassing Legislative Countil to enact a Face Mask Ban effective Oct 5 (Sat), with the exemptions to police officers and health, religious and professional reasons, carries consequences of a fine and up to a year imprisonment. Following the announcement, the itinerary for Friday's demonstration came out quickly: Mask Day - everyone to come out in masks against the new law. Even from the morning, I saw the result of the support out on the street from people going about their routine (1st pic). Thousands came out in the evening on short notice to voice their discontent. On this day, the usual chant of "Hong Kong people, add oil! (a saying of encouragement)" changed its tone to "Hong Kong people, revolt!". An injunction was denied that evening before its enactment, and legislators have criticized it as being unconstitutional. Since the ban, numerous demonstrations recently have been against it, as well as videos surfacing of police officers harrassing reporters about their (gas) masks, which is troubling because it seems the highly criticized heavy handed police force aren't familiar with the law they're supposedly enforcing. It's problematic since it's not uncommon tear gas is fired liberally down the street of only civilians and residents, where protestors are long gone, because not wearing one would expose to the chemical fumes, yet wearing one could be a punishable crime. It opens the doors to more arbitrary stops and arrests, as well as invoking the ERO opens up the possibilities of more restrictions, such as curfews, internet and press censorship, entry & search of premises; akin to martial law.
Sometimes you just need to appreciate the little things. There’s beauty in the tiniest areas.
🏔 Have you ever stood on top of a mountain and felt this rush of complete oneness with nature around you? That moment where you are reminded of how infinitesimal you are in this ginormous, beautiful world? When you are on a precipice, all your worries get small. you feel the rhythm of what’s around you and blend with the vibe of it all. You praise the Creator of the mountains for caring about your personal journey + heart. There is a sense of sweet freedom mixed in with the chilly air. .
While I miss the mountains of Colorado + the beckoning of my heart to pursue adventures, I felt a similar feeling today. A freedom in the joys of my everyday life. Maybe it was the invigorating run; maybe the hours spent alone in a rustic coffeehouse deepening my knowledge; maybe it was God’s voice in the cool October breeze whispering, “I love you.” This afternoon, I felt a wholeness that I haven’t felt in a while — a renewing of self + of my mind. A reminder of why I am here + why I need to keep pursuing all avenues of my calling. .
I miss the mountains, but maybe this is a season of growth and rest. So if you are in a time of adventure + change, choose to dwell and delight in the Lord and His goodness. + if you are in a time of rest + refinement, still choose to dwell and delight in the Lord and His goodness. .

Someone once told me that u might not be everyone’s cup of tea but u could be someone’s Latte. The more I grow, the more I learn that, it’s ok not to be liked or desired by everybody, after all, majority never changed the world, it’s always been the minority. The few who dare to be different. So find your tribe & surround urself with people who let u soar to ur greatest dreams. .
