not sure when i decided i was too adult for sandwiches, but bringing chips and a sandwich to work for lunch brought back some serious childhood memories 🥰 it was such a nice change of pace, and i ended up making a 🥪 + chips for lunch EVERY day last week and once for dinner! in search of more sandwich inspo - what are your favorite sandwiches?
5 minutes per sandwich / 4 servings
8oz of sliced deli chicken
1 package of mild white cheddar
1 tomato, sliced
1/2 red onion, sliced
sprouts or spinach or both!
4 eggs, fried (optional)
mayo (i used @sirkensingtons)

recipe: toast your bread (if from frozen). spread mayo on one slice and 1/4 avocado on the other. add cheese, red onion, chicken, spinach, fried egg, tomato, and slice down the middle. pair with your favorite chips ( @terrachips are delish!) or veggies and pack for lunch 💛 lmk what you think!
Any human BEAN would be crazy not try this fun twist on taco Tuesday aka 10-MINUTE VEGGIE TACOS 🎉🌮 Recipe inspired by my stepdad 💯👌🏼and could not be any easier 〰️ Slice up two green peppers & 1 small onion & sauté with a couple tbsp of olive oil on medium heat until onions sweat. Lower the heat to medium low, then add in a can of black beans (rinsed) & cook for a few minutes until beans soften. Add in taco seasoning and mix together. Continue cooking for a few more minutes until all the flavors marinate. Then serve in your favorite taco shells! 🌮🌮🌮 Maybe add some jalapeños, shredded lettuce, tomatoes & hot sauce 🔥🥬🍅

I know health/nutrition coaches are supposed to pretend we feel 100% vibrant, energetic, and all-round excited about life ALL THE TIME but the truth is when I first wake up in the morning, I need some slow/quiet time before I am ready to face the world. And the last thing I wanna do is come up with a creative, healthy, delicious breakfast idea, dig through the fridge, and cook something from scratch. That’s why I like to make bulk breakfasts on the weekend and keep them in the fridge - like this #glutenfree veggie muffin, made from grated carrots and zucchini, brown rice flour, chickpea flour, eggs, herbs, and olive oil. Baked these on Sunday evening and they’ll last me all week.

The #dEATS: @minimalistbaker Thai peanut salad, using @traderjoes tempeh & @lightlifefoods tempeh, but since I baked the tempeh the day before I ate it, I airfried it quickly to develop the most PERFECT crispy exterior, and then dredged it in more marinade.👅🥜
Served with the recommended veggies + red onion/cucumber/lime and @anniechunsinc brown rice noodles!
