Tomato basil soup:
1️⃣box of cherry tomatoes
2️⃣yellow/orange heirloom tomatoes
1️⃣Red bell pepper
1️⃣box of vegetable broth
1️⃣tbs of tomato paste
1️⃣tbs balsamic vinaigrette
1️⃣ bag of croutons
1/2 cup Parmesan cheese
1/2 cup heavy cream
Basil, garlic salt, pink salt and pepper plus olive oil. .
➡️pre heat oven to 475°. Then slice up your tomatoes into quarters. Remove the seeds from the tomatoes. Place them in a baking sheet lined with tin foil. Then add whole garlic cloves. Drizzle with olive oil and season with pink sea salt and pepper. Roast for about 25-30min until they get a nice char to them. .
➡️in a pan over medium heat add in 1 tbs of butter and diced red potato and cook to a golden brown. Then add in diced shallots and red bell pepper. Cook for about 5 mins. Add in tomato paste. Then take it and add it into a food processor (blender). Blend up to smooth consistency. In a big pot add in vegetable broth and blended potato mixture. Bring to a boil. Once tomatoes are done blend those up along with a handful of basil then add to the pot. Bring to a boil and add in balsamic and parm cheese. Season with garlic salt and pepper. Taste to see if you need more salt or pepper. Serve in a bowl and top with extra parm cheese and croutons! 😋
