Almost seven months post baby, I have been trying to make small changes in my diet wherever I can to cut down on sugars and processed foods.
I am in love with this coconut milk chia pudding with fresh mango puree, berries and granola.
It is SO easy to put together and makes for a delicious breakfast or snack. .
RECIPE: - One box (200ml) low fat coconut milk
- 3-4 tablespoons chia seeds
- 1 tablespoon maple syrup
- 1 fresh mango pureed ( you can use any fruits you like) - granola or roasted nuts - fresh berries for topping . - in a bowl mix coconut milk, maple syrup and chia seeds. Whisk and let it stand for about 10 minutes, do whisk from time to time to avoid the chia seeds from clumping together. Refrigerate for few hours. I usually do it a night before - in a bowl layer with your favourite fruit puree or berry compote (If you don’t have time or available compote a berry jam works well with this too), fresh fruits, granola and a generous layer of the chia pudding. .
Note: a family member gave me this amazing tip of using pure maple syrup rather than sugar, which i not only use in this recipe but I have replaced sugar in so many recipes and it tastes amazing! .
Feeling generally unwell and suffering from chronic issues on a daily basis is NOT normal.
