Also really grateful for my basil plants that provide enough leaves for me to be able to make my own pesto, especially in times like these.
Easy Peasy Pesto Pasta
Good for 3-4 servings
300g dry pasta of choice
Salt, to taste
Chili flakes and more fresh basil (optional)
2 1/2 cups packed basil leaves
3/4 to 1 cup olive oil
1/4 cup pine nuts, optional
1 tbsp lemon juice
2 cloves garlic
1 tsp salt, or to taste
1. Add basil, nuts (if using), lemon juice, garlic, and start with 3/4 cup olive oil. Process everything until smooth, adding olive oil as needed. Season with some salt to taste.
2. Cook pasta until al dente.
3. Heat a pan. Add in the pesto. Add in the pasta, mix, and cook fora few mins. Add some chili flakes (if using) and season with more salt (if needed), to taste. Turn off heat and top with some pine nuts and more basil, if desired. Enjoy!
Storage tip: place pesto in an airtight container and refrigerate for up to 1 week. Keep in the freezer for up to 3 months (or possibly even longer!) If you’ve seen some of my behind-the-scenes stories, I recently moved my photography set-up indoors so now I have a small table holding my boards right beside a window. I’ve been taking some time to try out new shooting angles and play around with my light source too (I shoot with natural light!). I’ve also been playing around with my Canon M200 from @canonphils and enjoying how light the camera is since I do shoot with 1 hand and have my other hand holding up my reflector or a fork/spoon. 😅 There are a lot of different shooting modes but I’m particularly enjoying the food photography mode (of course). The Canon app is also extremely handy since there’s a live shoot mode and you can basically use your phone to control your camera, which is super handy when you have to do some pouring/action shots. Anyway, this is just one of the dishes I’ve shot with it and can’t wait to share more.
