Missed the boat on National Mac & Cheese day but definitely making up for it with this Pancetta, White Wine and Wilted Spinach Mac & Cheese.
2 cloves garlic, finely chopped
1/4 large red onion, finely chopped
1/2 cup dry white wine
60g spinach, roughly chopped
10g parsley, finely chopped
2 tbsp unsalted butter
3.5 tsbp all purpose flour
1.5 cups milk
40g pecorino romano, finely grated
50g parmigiano reggiano, finely grated
1 tsp white pepper
1. Place a large pot of salted water onto boil and cook macaroni until al dente.
2. In a frying pan, saute pancetta, garlic and red onion until the pancetta becomes crispy. Deglaze the pan with white wine, add in parsley and simmer on low heat.
3. Melt butter in a medium sauce and add in the flour when the butter begins to bubble. Whisk constantly until a roux forms and there are no longer any more lumps visible.
4. Gradually add in the milk and white pepper, continue to whisk consistently.
5. Gradually add in the cheese and whisk to ensure that it has fully melted and that no lumps form.
6. Add the pancetta mixture to the cheese sauce and stir until well combined.
7. Add in the macaroni and spinach and stir well.
8. Pour the macaroni into an oven safe dish and top with panko breadcrumbs and grated parmesan.
9. Broil in the oven for 2 minutes or until the cheese has melted and the top has become nice and crispy.
10. Remove from the oven, let cool for 5 minutes, serve and enjoy
This slow roasted chicken teriyaki drumstick was so tender and moist, it went well with the buttery, golden mashed potatoes N steamed, buttered summer squash. The Italian bread added the finishing touch to help clean the plate. So yummy. Another family favorite.

Sweet & sour meatballs are on the menu in my house every other week. They come together very fast and the sauce doesn’t need hours to simmer so it’s perfect for weeknights. Also, and most importantly, everyone in my family actually eats them!
As it turns out, pimento cheese squash casserole is not easy to photograph 😬
But what is easy is this recipe! Just substitute Daddy Bob’s into your favorite summer squash recipe in place of your own cheese!
When everyone universally agrees that a particular restaurant is THE place to go, my gut usually tells me that something is not right. Take buffets, for example — it’s hard to sustain consistent high quality and quantity across hundreds of dishes. With few exceptions, I stay away. I have learned, however, that there are exceptions to every rule. @martinsbbq is a case in point. I ordered the Big Brother Sampler. I like my ribs wet — these #ribs were seasoned (yes, you should season before adding the sauce) and simply fell off the bone. The #brisket was tender and boasted a nice meat/fat ratio, ensuring the coveted salty-savory combination that drives us all crazy. The meat was appropriately served on white bread, which has no nutritional value, but soaks up all that sauce nicely. Again, I don’t do #macncheese in restaurants, but this macaroni was no joke . Most places go overboard on some cheap cheese, however, @martinsbbq’s mac and cheese allowed the flavorful #béchamel to enhance a small amount of sharp tangy cheese. AND they top their Mac with bread crumbs, adding a crunchy texture and yet another layer of flavor. Finally, the #coleslaw was not heavy on the mayo and just right with the tanginess. All in all, this place more than lived up to the hype, and I can’t wait to return in the fall!

@maxswinedive has to be one of my favorite spot in Houston to get fried chicken and their amazing wine list to go along with it. The ambiance is nice for a causal night out with a glass or bottle wine along with some great company. My go to item every time is The Famous Southern Fried Chicken it’s 3 pieces of perfectly crispy jalapeño-buttermilk marinated fried chicken. With a side of collard greens and I switch out the mash potatoes for the jalapeño-cheesy grits. I’m telling you it’s amazing! The chicken is nice and moist on the inside, crispy skin and super flavorful. Highly recommend Max Wine Dive if you want a delicious comfort food paired with some wine. Rating: 9/10😋

PASTA : Spaghetti Colavita @colavitausa that you can find @pricerite for $.99
PECORINO CHEESE : Pecorino Locatelli that you can find @bjswholesale (1lb bag)
BLACK PEPPER : you need the grounded one. 🍝🍝🍝🇮🇹🇮🇹RECIPE for 4 PEOPLE🇮🇹🇮🇹🍝🍝🍝 INGREDIENTS
- 1lb spaghetti
- 1/2 lb pecorino cheese
- ground black pepper as required - LOVE ❤️ DIRECTIONS
Start by cooking your spaghetti pasta in a large pot of salted, boiling water according to package direction.
As soon as you add your pasta to the boiling water, you will make your cream on side in a large bowl. Mix the pecorino cheese with the ground black pepper (almost 50/50 in color proportion of white and black). Add some boiling water until the cheesy cream is very thick.
Heat a large skillet over medium-high heat with E.V.O.O and black pepper.
Drain the pasta directly in the skillet pan when the pasta is very Al Dente and stir to combine.
When ready add the pasta to the cream you have made in the large bowl and stir until well combined.

Yesterday, it was heard on the radio that vegans have to eat so much spinach to get the right amount of iron. Firstly, spinach is not the only source of iron. Secondly, tofu, beans, grains, and seeds combined with fruits and vegetables give you enough of iron. Broccoli, other leafy greens, and tomato sauce also contains iron. Spinach is not the only vegetable that has iron on this planet.
It was also asserted by the radio host that vegans have to take supplements all the time. I do not find this to be a true statement. In fact, when I was eating meat, I was taking supplements every day for energy. My body felt slow and sluggish. A plant-based diet has helped my body so much, and I do not take supplements for energy anymore. I am so “full of beans” every day. My skin glows and I’m now a stable weight. I sleep well, have never felt better, and rarely get sick. When I first transitioned to a plant-based diet, I experienced a couple of detox symptoms for about 3-4 days after being a vegetarian (detox symptoms may last longer for an omnivore on an unhealthy diet), but after that I did not get a cold or flu for 2 years! I would not recommend a plant-based diet if it was not healthy, as it has only benefits for the body. It also has the added bonus of being cruelty-free and better for the environment 😊.
Finally, the radio host was agreeing with a listener who was declaring that he had wished he took his ex-girlfriend, who happened to be vegan, to a steakhouse. This is a form of discrimination against vegan people (and, more importantly, animals who cannot speak for themselves too). One may then make the counter argument that vegan people discriminate against meat eaters. However, if you saw an innocent person from a cultural minority group being bullied because of his or her race, would you not stand up for him or her? Would you accuse a person, who is standing up for the one being bullied, of discrimination against the racist? Similarly, vegans are standing up for powerless animals. They are defending powerless beings against those who abuse their power for the sake of their tongue. To accuse one, who has kindness and compassion towards
