Wafu Carrot Ginger Dressing
1/2 cup finely grated carrot
1 tbsp minced ginger
1 tbsp minced shallot
1 tsp mellow white miso (can do chickpea miso)
1 tsp honey (sub agave for vegan)
2 tbsp rice vinegar ( @marukanvinegar unseasoned)
3 tbsp neutral oil, such as untoasted sesame or avocado
1. in a blender purée all ingredients, thinning with about one tablespoon of filtered water
2. season dressing with salt & pepper
*makes 1/2 cup *can store in airtight jar in fridge a few days
