Today is my Brother and Sister-in-law's wedding anniversary! Since I cannot be there to celebrate this special day with them, I am sending them lots of sweet thoughts and sweet treats virtually! While they hold a very special place in my heart, so does this Apple Pistachio Mousse! I call it the Happy Dessert because it will make your heart smile just like some relationships in your life! I’m definitely not in the majority, chef-wise, when I say I’m a big fan of chicken breast, but I prefer the texture and flavor of white meat over dark. Spiced Pear Martini for the holiday season made with @hangar1distillery Straight Vodka, Pear Juice, a Spiced Simple Syrup and a splash of Prosecco. This vodka is smooth, slightly floral on the nose, and extremely versatile for both sweet and savory ingredients. For this Spiced Simple Syrup, I mixed together sugar, whole orange peels, freshly grated ginger, cinnamon sticks, whole cloves, cardamom pods and a bit of nutmeg. This drink can be prepped out ahead of time in a pitcher or punch bowl, then simply top each glass with Prosecco when ready to serve. It’s finally Friday and I wanted to begin the weekend with Octopus tostadas!
Previously boiled octopus is marinated in a mix o garlic, chili, honey , apple cider vinegar and olive oil , then pan fried quickly just to char the outside and get that marinade sticky and even yummier 😋 the tostadas are made with baked black garlic tortillas , then a good smear of mayo with lemon and mandarin juice 😍, don’t forget avocado and you are good to go 💃🏻 happy weekend everyone!
Attempts at staying healthy this holiday season are absolutely futile. @dunkrestaurants left us with Happy hearts and full bellies. .
We tried the:
• Fried Chicken Waffle ($14.50) - "fresh toasted waffle with 3 pieces of fried chicken, garnished with chipotle sauce, honey, and chopped jalapeno bits" - the chicken tenders were lightly battered and were juicy. I wouldn't call this fried chicken though, per se. Not sure what was up, but they replaced the jalapenos with green onion. The chipotle sauce tasted like sriracha mayo. My personal opinion? The chicken is good. The waffle is good. Get rid of all the sauces you're putting in and around the dish currently, give me back my jalapenos, and dish out some maple syrup on the side. .
• The Buffalo ($15.75) "two buttermilk fried chicken breast tossed in our signature buffalo sauce with a slice of grilled pineapple, arugula, garlic mayo served open faced on a French brioche bun." My personal opinion? Again - lay off the sauces! I'm a sauce boss, but there was just too much buffalo overpowering the other flavours. I don't think there was garlic mayo on mine, and although I could see the pineapple I couldn't taste it. The bun was nice and soft, but I wouldn't call it a French brioche. On the other hand, I've been dying to see sweet potato lattice fries, so that was a win! 🐔 // #toronto

My updated Peanut Butter Blossoms with Chocolate Ganache for day #4 🤗🍪🎄 I’ve improved my recipe to be softer, chewier, and EASIER! I was walking the produce section of my HEB when I spotted, peaches! I know they’re not in season anymore but they looked beautiful and ripe so I couldn’t resist. I already had blueberries at home so the combination of both was inevitable.
The very first bite took me right back to summer… While standing next to my Christmas Tree.
Fun fact: When I was pregnant with my first daughter all I craved was peaches. I was lucky enough to have a Fredericksburg farmer nearby so I visited his stand two or three times a week. That summer I enjoyed the most delicious, juiciest peaches of my life. My daughter was born with her skin covered by a thing fuzz,
